Homegrown dinner

When we first got here and started growing food, each meal was preceded by a verbal observation of what in the meal was actually grown by us. eg. our greens, our beans etc.  And at first it was mainly just that…ʽour greens’.

A few ingredients from last nights meal. Squash, corn and carrots.

But last night, after one year of working towards self sufficiency, that list expanded to include: our carrots, tomatoes, squash, corn, garlic, spring onions, garlic chives, oregano and chilli.  Not to mention the homegrown veges that weren’t represented in that particular meal but which are readily available at the moment like potato, cucumber and beans – and hopefully, if all goes well, as they are not yet in fruit/root – capsicum, eggplant and beetroot.

We were so proud of ourselves I actually took a photo of what was in the frypan!

What’s slowing us down at the moment is the digging of the beds now that the summer garden is basically finished.  It’s a rather large area and we can’t quite get enough compost and mulch together at the moment to finish all the beds…let alone the digging part.  So we are actually a little behind on our plantings; sowing late rather than early.

Hopefully next year all the beds will be ready to plant in with only a small amount of digging, composting and mulching required.
